Bread Pudding

Ingredients

Directions

The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point.

Make the pudding

  1. Soak the bread crumbs in the milk.

  2. Beat the egg yolk and mix in the sugar.

  3. Stir the egg mixture into the soaked bread and milk.

  4. Add the raisins and pour the mixture into a baking dish.

Top and bake

  1. Beat the egg white until stiff and gradually add 1½ tablespoons of sugar to make a meringue.

  2. Spread the meringue over the pudding and bake at 350°F (175°C) until golden brown.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Bread crumbs
Soak up the milk to form the soft, moist body of the pudding.
Milk
Moistens the bread and forms the custard base with the egg.
Egg
Sets the custard as it bakes, giving the pudding its structure.
Sugar
Sweetens the pudding and, in the meringue, helps the egg white hold its shape.

The step that matters

Baking the meringue topping. Egg white must be beaten until stiff and the sugar added gradually so the foam stays stable. Under-beaten or over-baked meringue can weep or turn leathery, while the oven heat sets and browns the surface.

Swap the raisin

How well each one fits the dish's main ingredients (milk, bread, egg, sugar):

  1. Vanillafits better
  2. Figfits better
  3. Datesfits about as well
  4. Raisinthe original

Fit is the average pairing score against milk, bread, egg, sugar. Candidates are from the same food group and used in at least 100 recipes.
