What each ingredient does

Oatmeal
Its starch swells and thickens the water as it cooks, forming the porridge body.
Boiling water
Hydrates the oats so their starch gelatinizes and the porridge becomes creamy.

The step that matters

Stirring during the 20-minute boil. Stirring too much releases starch from the oats, making the porridge gluey. Stirring too little lets oats settle and scorch on the pot bottom. Stir only as needed.
