Cream Soups

Ingredients

Directions

  1. Boil vegetables with seasonings until soft.

  2. Strain the vegetables and add to an equal quantity of thin white sauce.

  3. Reheat the mixture but do not boil to prevent curdling.

  4. To prevent curdling, add a speck of baking soda to the vegetable pulp before combining with the sauce.

  5. Alternatively, cook butter, flour, and vegetable pulp together, then add hot milk just before serving.

  6. For thickening, mix cornstarch or flour with cold water, stir into the vegetable pulp, and boil until smooth.

  7. If the soup is too thick, add more hot milk; if too thin, stir in a beaten egg just before serving.
