What each ingredient does

Coffee
Provides the main flavour and aroma, extracted into the hot water as it boils.
Egg shells or egg
Egg proteins bind to fine grounds and carry them down, so the coffee clears.

The step that matters

Let the coffee stand after adding cold water. The cold water cools the surface slightly and the rest period lets grounds sink with the egg. Pouring too early leaves fine grounds suspended, so the coffee tastes muddy and gritty.
