Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Gelatine
Sets the liquid into a firm, sliceable jelly as it cools.
Sugar
Adds sweetness and balances the sharpness of the lemon juice.
Lemon juice
Provides sharp acidity and the main lemon flavor.

The step that matters

Dissolve the gelatine fully before combining. Gelatine must be completely dissolved in water before it joins the hot mixture; undissolved granules can leave gritty or weak spots. Once combined, the mixture must cool and chill undisturbed so the gelatine network can set firmly.

Swap the lemon

How well each one fits the dish's main ingredients (sugar, syrup):

  1. Vanillafits better
  2. Raisinfits better
  3. Pearfits about as well
  4. Lemonthe original

Fit is the average pairing score against sugar, syrup. Candidates are from the same food group and used in at least 100 recipes.
