Oysters on Horseback

Ingredients

Directions

The book gives no oven temperature. The 400°F (200°C) in the steps was added when the recipe was transcribed, as a starting point. The book gives no cooking times either; the times in the steps were added in transcription, so check for doneness rather than trusting the clock.

  1. Preheat the oven to 400°F (200°C).

  2. Remove the gills from the oysters and place them on a baking dish.

  3. Spread a thin layer of butter over each oyster.

  4. Sprinkle breadcrumbs on top of the buttered oysters.

  5. Add a few drops of Worcestershire sauce and hot sauce to each oyster.

  6. Season with coarse sea salt and black pepper.

  7. Bake in the oven for about 10 minutes until golden brown.
