What each ingredient does

Eggs
The cooked protein that sets into the main body of the dish.
Butter
Adds richness and a foamy, flavorful coating for the crumbs.
Fine cracker crumbs
Soak up melted butter and add a light, toasty texture on top.

The step that matters

Keep the water just below boiling when poaching. At a full boil the whites churn and break apart, while water just below boiling sets the whites gently and keeps the yolks intact.

Swap the white pepper

How well each one fits the dish's main ingredients (egg, butter, parsley):

  1. Capersfits better
  2. Tarragonfits better
  3. Nutmegfits better
  4. White pepperthe original

Fit is the average pairing score against egg, butter, parsley. Candidates are from the same food group and used in at least 100 recipes.
