To Boil Lobsters

Ingredients

Directions

Cook the lobster

  1. Bring 1 gallon of water to a fast boil and add 5 oz of coarse sea salt.

  2. Carefully add the lobster to the boiling water.

  3. Cook a moderate-sized lobster for 15 to 25 minutes or a large lobster for 30 to 40 minutes.

Prepare and serve

  1. Remove the lobster and take off the large claws, cracking the shells at the joints.

  2. Separate the tail from the body and split it down the middle.

  3. Arrange the lobster neatly on a serving dish, garnished with curled parsley if desired.

  4. Serve with a good remoulade or oil and vinegar.

What each ingredient does

Lobster
Provides the main protein; cooking firms the flesh and turns the shell bright red.

The step that matters

Cook for the right time by lobster size. Overcooking toughens lobster meat, while undercooking leaves it unsafe to eat. Timing should follow the size of the lobster, so a moderate and a large lobster need different times.
