Dried Mushrooms

Oven, in the book's wordsA gentle oven

Ingredients

Directions

The book says “a gentle oven”. The 300°F (150°C) in the steps is the modern equivalent, not the book's own figure.

  1. Peel the mushrooms and cut off the stems.

  2. Scrape out the fur completely.

  3. Arrange the mushrooms on tins or dishes.

  4. Dry them gradually in a gentle oven at 300°F (150°C).

  5. Once dried, store them in tin canisters away from dampness.

  6. When ready to use, boil the mushrooms in water briefly, then drain.

  7. Add the mushrooms to cold gravy and slowly heat until tender.
