Fruit Creams, and Italian Creams

Ingredients

Directions

Make the cream

  1. Mix the heavy cream with the sweetened fruit juice or fruit jelly/jam.

  2. Add a few drops of prepared cochineal for color if desired.

  3. If using jam, mix it gradually with the cream.

Prepare the fruit

  1. For fresh fruit, crush it and sprinkle with sugar to extract juice.

  2. Strain the mixture through a sieve to remove seeds or skins.

  3. For peaches, pineapple, apricots, or nectarines, simmer in syrup.

  4. Drain the fruit and mix with cold cream.

  5. Drain on a fine sieve.

Finish and serve

  1. Add lemon juice to all mixtures.

  2. Whisk the mixture lightly to a froth.

  3. Serve immediately in glasses.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Heavy cream
Provides the rich body and creamy texture of the dessert when whipped lightly.
Fruit juice or jam
Adds sweetness and fruit flavor to the cream.
Lemon juice
Adds acidity that brightens the fruit flavor and balances the sweetness.
Fresh fruit
Supplies the main fruit flavor and juice that is blended into the cream.

The step that matters

Whisk the mixture lightly to a froth. Cream thickens as air is incorporated; overbeating can turn it grainy or into butter, so stop once it is frothy and soft.
