Ingredients

Directions

The book gives no oven temperature. The 300°F (150°C) in the steps was added when the recipe was transcribed, as a starting point.

Make the custard

  1. Gently boil milk, salt, lemon rind, and sugar in a saucepan for 5 minutes.

  2. Gradually stir the hot mixture into the well-beaten egg yolks and egg whites.

  3. Strain the mixture and add the cream.

  4. Let it cool, then flavor with brandy or ratafia.

Bake

  1. Pour into small well-buttered cups and bake slowly at 300°F (150°C) for 10 to 12 minutes.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Egg yolks
Thicken and set the custard as they cook, giving it a rich, smooth texture.
Egg whites
Add protein that sets during baking, giving the custard lightness and structure.
Milk
Provides the liquid base that gives the custard its body and moisture.
Heavy cream
Adds fat for a richer, silkier mouthfeel and softer set.
Loaf sugar
Sweetens the custard and helps keep it tender.

The step that matters

Stirring the hot mixture into the eggs. Adding the hot liquid gradually while stirring warms the eggs slowly, so they thicken smoothly instead of scrambling into lumps.
