Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Egg yolks
Thicken the dressing into a smooth, lightly set custard as they cook.
Sugar
Sweetens the dressing and helps balance the tartness of the citrus.
Lemons
Add acidity that brightens the dressing and balances its sweetness.
Bananas
Add soft texture and natural sweetness to the fruit mix.

The step that matters

Cooking the egg yolk dressing over hot water. Egg yolks set when heated, but if they get too hot they scramble and turn grainy. Gentle heat with constant stirring keeps the dressing smooth and only slightly thickened.

Swap the banana

How well each one fits the dish's main ingredients (orange, pineapple, sugar, egg, lemon, wine):

  1. Vanillafits better
  2. Figfits better
  3. Mangofits better
  4. Bananathe original

Fit is the average pairing score against orange, pineapple, sugar, egg, lemon, wine. Candidates are from the same food group and used in at least 100 recipes.
