What each ingredient does

Egg yolks
Thicken the syrup into a smooth, creamy dressing when gently heated.
Sugar
Sweetens the dressing and helps balance the acidity of the citrus.
Lemons
Add acidity and brightness that cut through the sweetness of the dressing.

The step that matters

Return to heat, stirring until slightly thickened. Egg yolks set when heated, but if they get too hot or are left unstirred they can curdle or scramble. Heat gently and keep stirring so the dressing thickens smoothly.

Swap the banana

How well each one fits the dish's main ingredients (orange, pineapple, sugar, egg, lemon, wine):

  1. Vanillafits better
  2. Figfits better
  3. Mangofits better
  4. Bananathe original

Fit is the average pairing score against orange, pineapple, sugar, egg, lemon, wine. Candidates are from the same food group and used in at least 100 recipes.
