What each ingredient does

Meat
Provides the main protein, which becomes tender as it simmers in the spiced liquid.
Potatoes
Absorb the spiced juices and add body and starch to the thickened soup.
Ghee
Carries the spices' aroma and adds richness to the finished dish.
Curd
Adds acidity that tenderises the meat and balances the spices.
Onion
Breaks down into the paste that forms the savoury base of the sauce.
Garlic
Adds pungent aroma that deepens as it cooks into the spice paste.

The step that matters

Stir the spice paste and curd before adding the meat. Frying the paste in fat until it darkens releases aroma from the spices and cooks off raw flavour. Curd added to hot fat can split, so stir steadily over moderate heat.
