Boiled Beets

Ingredients

Directions

Prepare the beets

  1. Wash the beets in cold water, avoiding breaking the fibrous roots.

  2. Place the washed beets in a large saucepan with boiling water and boil until tender.

  3. Drain the boiling water and rub off the skins of each beet using a clean, dry towel.

Make the pickling liquor

  1. In a separate saucepan, combine vinegar, mace, and peppercorns, and boil for 5 minutes.

Dress and serve

  1. Slice four of the beets into ¼‑inch thick slices and place them in a vegetable dish.

  2. Melt the butter and pour it over the sliced beets, then sprinkle with pepper and salt.

  3. Slice the remaining two beets and arrange them in a vegetable dish, then pour the prepared vinegar over them.

  4. Let the beets cool before serving.

The flavor team

The pairs that carry this dish. Each one is judged two ways: how much their aromas overlap, and how often cooks already put them together.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Beets
Provide the main body, earthy flavour and colour of the dish.
Vinegar
Adds acidity that sharpens flavour and balances the beets' sweetness.
Butter
Adds fat and richness that carries the seasoning over the sliced beets.
Peppercorns
Contribute pungent, aromatic heat that flavours the pickling liquor.

The step that matters

Boil the beets until tender. Beets must be cooked fully through so the flesh softens evenly and the skins slip off cleanly. Undercooked beets stay firm and fibrous, while overcooking leaves them mushy and bleeding colour.

Swap the mace

How well each one fits the dish's main ingredients (vinegar, butter):

  1. Tarragonfits better
  2. Garlicfits better
  3. Parsleyfits better
  4. Macethe original

Fit is the average pairing score against vinegar, butter. Candidates are from the same food group and used in at least 100 recipes.
