Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Egg white
Whipped to stiff peaks, it lightens the batter and helps it puff and crisp.
Flour
Forms the batter that coats the potatoes and turns golden when fried.
Boiled potatoes
Form the soft interior of each fritter beneath the crisp coating.

The step that matters

Folding in the egg white. Whipped egg white traps air that helps the batter rise and stay light. Stirring it in vigorously knocks the air out, so fold gently and keep the batter from being overworked.

Swap the white pepper

How well each one fits the dish's main ingredients (potato, flour, egg):

  1. Jalapenofits better
  2. Nutmegfits better
  3. Capersfits better
  4. White pepperthe original

Fit is the average pairing score against potato, flour, egg. Candidates are from the same food group and used in at least 100 recipes.
