Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Butter
Enriches the sauce and carries flavour, and with flour forms the base of the thickened sauce.
Flour
Thickens the milk into a smooth sauce when cooked with the butter.
Oysters
Provide the main flavour and briny body of the sauce.
Milk
Forms the liquid that the flour thickens into a creamy sauce.
Essence of anchovies
Adds a salty, savoury depth to the sauce.

The step that matters

Strain the sauce over the oysters, heat without boiling. Milk-based sauces can curdle, scorch, or turn grainy when boiled after thickening, and the oysters toughen and shrink if overheated. Gentle heat keeps the sauce smooth and the oysters tender.

Swap the mace

How well each one fits the dish's main ingredients (butter, flour, oyster, milk, pepper, clove, sauce):

  1. Nutmegfits better
  2. Cinnamonfits better
  3. Allspicefits better
  4. Macethe original

Fit is the average pairing score against butter, flour, oyster, milk, pepper, clove, sauce. Candidates are from the same food group and used in at least 100 recipes.
