Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Fowl or other poultry
Provides the main protein, which becomes tender and cooked through during gentle moist heat.
Bacon or fat ham
Its fat bastes the bird from above, adding moisture and savory flavor as it cooks.
Onion
Releases aromatic compounds into the steam, adding savory flavor to the bird and liquid.
Carrot
Adds subtle sweetness and aroma to the cooking liquid and steam.
Water
Creates steam inside the sealed bag, keeping the bird moist during cooking.

The step that matters

Sealing the bag. A tightly sealed bag traps steam so the bird cooks in its own moisture. If it leaks, moisture escapes, the meat can dry out, and the flavors become less concentrated.

Swap the celery

The recipe marks celery as optional. How well each one fits the dish's main ingredients (ham, carrot, onion, clove, pepper):

  1. Celerythe original
  2. Parsleyfits about as well
  3. Thymefits about as well
  4. Marjoramfits about as well

Fit is the average pairing score against ham, carrot, onion, clove, pepper. Candidates are from the same food group and used in at least 100 recipes.
