Ingredients

Directions

The book says “a moderate oven”. The 350°F (175°C) in the steps is the modern equivalent, not the book's own figure.

  1. Wash and peel the potatoes, then cut them into very thin, even slices.

  2. Soak the potato slices in cold water for 30 minutes, then drain and dry them with a clean cloth.

  3. Butter the bottom and sides of a fireproof dish with a closely-fitting lid.

  4. Layer the potato slices in the dish, adding a layer of butter on top.

  5. Cover the dish with the lid and bake in a moderate oven at 350°F (175°C) for 45 minutes.
