Ingredients

Directions

The book says “a moderate oven”. The 350°F (175°C) in the steps is the modern equivalent, not the book's own figure.

Prepare the apples

  1. Peel, core, and slice the apples.

  2. Place the sliced apples in a saucepan with the sugar and 2 tablespoons of water.

  3. Simmer gently until tender.

  4. Rub the cooked apples through a fine sieve.

  5. Return the apple pulp to the saucepan.

Make the filling

  1. Add the lemon juice and finely grated lemon rind.

  2. Reheat.

  3. Stir in the yolks of 6 eggs and the whites of 2 eggs.

  4. Cook until the mixture thickens.

Bake and serve

  1. Line patty pans with pastry.

  2. Partially bake the patty pans.

  3. Fill the pastry with the apple mixture.

  4. Cover lightly with stiffly whipped sweetened egg whites.

  5. Bake at 350°F (175°C) for about 15 minutes.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Apples
Provide the bulk and tart fruit flavour of the filling once cooked to a pulp.
Eggs
Thicken the apple mixture as it cooks and form the whipped meringue topping.
Sugar
Sweetens the apples and helps the meringue topping brown lightly in the oven.
Butter
Adds richness and a smooth, tender mouthfeel to the filling.
Lemons
Add acidity and aroma that brighten the sweet apple filling.

The step that matters

Cook the filling until it thickens. Egg yolks set when heated, so the mixture must be cooked gently and stirred until thick; overheating can curdle the eggs, while undercooking leaves the filling runny.

Swap the apple

How well each one fits the dish's main ingredients (sugar, butter, egg, lemon):

  1. Vanillafits better
  2. Orangefits better
  3. Raspberryfits better
  4. Applethe original

Fit is the average pairing score against sugar, butter, egg, lemon. Candidates are from the same food group and used in at least 100 recipes.
