Lemon Cheesecakes

Oven, in the book's wordsA moderately hot oven

Ingredients

Directions

The book says “a moderately hot oven”. The 350°F (175°C) in the steps is the modern equivalent, not the book's own figure.

Make the lemon filling

  1. Combine sugar, butter, lemon rind, and strained lemon juice in a saucepan; stir until sugar dissolves.

  2. Beat egg yolks and add to mixture; stir and cook slowly until thickened.

  3. Let mixture cool in a dry place until needed.

Bake and serve

  1. Line patty pans with short paste and fill them three-quarters full with the lemon mixture.

  2. Add a few strips of candied peel on top and bake for about 20 minutes at 350°F (175°C).

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Eggs
Egg yolks thicken the lemon mixture as they cook and set it into a custard.
Butter
Adds richness and a smooth, silky texture to the lemon filling.
Loaf sugar
Sweetens the filling and balances the sharp acidity of the lemon juice.
Lemon juice
Provides the tart flavour and acidity that gives the filling its character.

The step that matters

Cook the filling slowly until thickened. Egg yolks thicken when heated gently; too much heat can curdle them into lumps, while too little leaves the filling runny.
