Ingredients

Directions

The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point.

Make the filling

  1. Cream the butter and sugar together until light and fluffy.

  2. Beat in each egg yolk one at a time.

  3. Add the juice and finely grated rind of the lemons.

  4. Let the mixture stand in a cool, dry place for at least 24 hours.

Bake

  1. Preheat the oven to 350°F (175°C).

  2. Line patty pans with short pastry and fill with the lemon mixture.

  3. Bake until set and lightly golden.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Butter
Creams with sugar to trap air and give the filling a rich, tender body.
Caster sugar
Creams with butter to build a light structure and adds sweetness.
Egg yolks
Emulsify the mixture and set when baked, giving the filling its firm, custard-like texture.
Lemons
Juice provides acidity and sharp flavour; grated rind adds aromatic lemon oils.

The step that matters

Baking until just set. Egg yolks set as their proteins coagulate with heat. Overbaking curdles and toughens the filling, while underbaking leaves it runny, so the tartlets should be removed once set and lightly golden.
