Lemon Tartlets

Oven, in the book's wordsA moderately hot oven

Ingredients

Directions

The book says “a moderately hot oven”. The 350°F (175°C) in the steps is the modern equivalent, not the book's own figure.

Prepare the lemon filling

  1. Thickly pare the lemons and boil them in 2-3 waters until tender.

  2. Pound or rub the boiled lemons through a fine sieve.

  3. Return the lemon puree to a stewpan, add sugar, almonds, and lemon juice.

  4. Boil the mixture until a thick syrup forms.

Fill and bake

  1. Line 10-12 patty pans with short pastry.

  2. Fill the lined pans with the lemon mixture.

  3. Bake for about 20 minutes at 350°F (175°C).

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Lemons
Provide the bright, tart flavour and the bulk of the filling once boiled and pureed.
Loaf sugar
Sweetens the filling and, with boiling, thickens it into a syrupy mass.
Blanched almonds
Add body and a rich, nutty texture to the filling.

The step that matters

Boiling the mixture until a thick syrup forms. Cooking the puree with sugar and almonds drives off water and concentrates the sugar, so the filling sets thick rather than runny in the baked tartlet.
