Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Ground almonds
Provide the bulk and nutty flavor of the paste.
Loaf sugar
Sweetens the paste and, when boiled to a syrup, helps bind it.
Egg whites
Add moisture and help bind the almonds into a smooth paste.

The step that matters

Boiling the syrup to 237°F (113°C). Sugar syrup must reach the right concentration to bind the almonds properly. Undercooked syrup leaves the paste soft and sticky, while overcooked syrup makes it hard and brittle once cooled.

Swap the almond

How well each one fits the dish's main ingredients (sugar, egg, lemon):

  1. Pistachiofits about as well
  2. Milletfits about as well
  3. Almondthe original
  4. Chickpeafits about as well

Fit is the average pairing score against sugar, egg, lemon. Candidates are from the same food group and used in at least 100 recipes.
