Beef and Ham Pastie

Oven, in the book's wordsA quick oven

Ingredients

Directions

The book says “a quick oven”. The 400°F (200°C) in the steps is the modern equivalent, not the book's own figure.

  1. Fry the steak, onion, and parsley in a little dripping for 15 minutes, turning constantly to prevent burning.

  2. Pour in a small quantity of stock, cover, and let simmer gently for 1 hour. Set aside to cool.

  3. Roll out the short paste to medium thickness and cut into a round the size of a meat plate.

  4. Place the cooked beef on one half of the paste and fill the spaces with coarsely-chopped ham.

  5. Season with salt, pepper, and grated nutmeg. Fold over the paste, moisten the edges, and press them together.

  6. Bake in a 400°F (200°C) oven. When nearly done, brush with egg white. Serve hot or cold.
