Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Potatoes
Form the bulk and body of the cakes once grated and mixed.
Egg yolks
Add richness and help bind the grated potatoes together.
Egg whites
Whipped to stiff peaks, they lighten the mixture and add airiness.
Rich sweet milk
Adds moisture and softness to the batter and sweetness to the cakes.
Lard
Fries the cakes, conducting heat and promoting golden browning.

The step that matters

Squeeze out all the water from the grated potatoes. Grated potatoes release a lot of liquid. Removing it keeps the batter from becoming soggy and helps the cakes hold their shape and brown properly in the hot fat.

Swap the potato

How well each one fits the dish's main ingredients (egg, milk):

  1. Asparagusfits about as well
  2. Potatothe original
  3. Capsicumfits less well
  4. Sweet potatofits less well

Fit is the average pairing score against egg, milk. Candidates are from the same food group and used in at least 100 recipes.
