Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Oysters
Provide the main flavor and tender seafood body of the soup.
Milk
Forms the creamy liquid base and adds sweetness and softness.
Butter
Adds richness and a smooth, mellow mouthfeel to the broth.
Double baked rusks
Crushed rusks thicken the soup slightly and add toasted, grainy body.

The step that matters

Remove from heat as soon as it begins to boil. Milk-based soups can scorch or curdle and turn grainy if held at a hard boil, and oysters toughen when overcooked. Pulling the pot off at the first boil keeps the soup smooth and the oysters tender.

Swap the celery

How well each one fits the dish's main ingredients (oyster, milk, butter):

  1. Cinnamonfits better
  2. Nutmegfits better
  3. Parsleyfits about as well
  4. Celerythe original

Fit is the average pairing score against oyster, milk, butter. Candidates are from the same food group and used in at least 100 recipes.
