Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Calf's liver
Is the main protein, cooked gently so it stays tender and moist.
Flour
Forms a light coating that helps the liver brown and thickens the pan juices.
Butter
Adds richness and flavour and helps the surface brown in the skillet.
Lard
Adds fat with a high smoke point, so the skillet heats well for browning.
Hot water
Deglazes the skillet and loosens the browned bits to form a thin gravy.

The step that matters

Cook slowly under cover. Liver is thin and lean, so high heat toughens and dries it. Gentle covered cooking keeps the inside tender while the coating browns.
