What each ingredient does

Quails
The main protein, which cooks through and browns in the butter.
Butter
Fat that heats to browning temperature and gives the quails a golden surface and rich flavor.
Juniper berries
Add a resinous, aromatic flavor that is released into the fat and pan juices.

The step that matters

Brown the quails before covering. Browning in hot butter creates flavorful Maillard compounds on the surface. Covering too early steams the birds and leaves them pale, with less flavor.
