Why it works: Sugar and syrup match in chemistry and in kitchens. They rank in the top 6% of all ingredient pairs, and cooks put them together in 5,842 recipes. Both carry ethanol, which smells alcoholic, ethereal. The science ↓

Curd Pie

Ingredients

Directions

The book gives no oven temperature. The 400°F (200°C) in the steps was added when the recipe was transcribed, as a starting point.

Prepare

  1. Grease a deep pie plate with butter.

  2. Line the greased pie plate with puff pastry.

Make the curd filling

  1. Combine the curds, salt, and cream in a bowl.

  2. Rub the mixture together with the back of a spoon until smooth.

  3. Beat the egg yolks and sugar together.

  4. Stir the beaten yolks and sugar into the curd mixture.

  5. Add the raspberry syrup and mix well.

  6. Beat the egg whites with 2 teaspoons of sugar until stiff peaks form.

  7. Gently fold the stiff egg whites into the curd mixture.

Bake

  1. Pour the curd mixture into the prepared pie plate.

  2. Bake at 400°F (200°C) for about 20 minutes.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Curds
Form the body of the pie, giving it a soft, rich, custard-like filling.
Eggs
Egg yolks enrich and set the filling, while whipped whites add lightness and structure.
Thick sweet cream
Adds fat and richness, making the filling smoother and more tender.
White granulated sugar
Sweetens the filling and helps stabilize the beaten egg whites.
Raspberry syrup
Adds sweetness and fruity flavour to the filling.

The step that matters

Folding in the egg whites. Stiff whites hold air that gives lift. Folding gently keeps that air in; stirring hard deflates the whites and leaves the pie dense.

Swap the raspberry

How well each one fits the dish's main ingredients (cream, sugar, egg, syrup, butter):

  1. Vanillafits better
  2. Strawberryfits about as well
  3. Raspberrythe original
  4. Raisinfits about as well

Fit is the average pairing score against cream, sugar, egg, syrup, butter. Candidates are from the same food group and used in at least 100 recipes.
