Strawberry Sauce

Ingredients

Directions

Make the sauce base

  1. Place the strawberry syrup in a saucepan over a pan of boiling water.

  2. Mix the corn starch with a little cold syrup or water, then stir the mixture into the saucepan.

  3. Stir until it boils for 2 minutes.

  4. Add the sugar.

Thicken and finish

  1. Beat the egg yolks with a spoonful of cold milk, then stir the beaten yolks into the sauce.

  2. Stir until the sauce thickens, but do not let it boil after adding the yolks.

  3. Remove from heat.

  4. Stir in the sherry wine.

  5. Beat the egg whites with 2 teaspoons of sugar until stiff, then fold the stiff whites into the sauce.

  6. Pour the sauce into a serving tureen.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Eggs
Yolks thicken the sauce as they set, and whipped whites add a light, airy texture.
Corn starch
Gelatinises when heated, thickening the sauce into a smooth body.
Strawberry syrup
Provides the main strawberry flavour and liquid base of the sauce.
White granulated sugar
Sweetens the sauce and sweetens the whipped egg whites.

The step that matters

Stir in the yolks without boiling. Egg yolks begin to scramble and curdle when overheated, so the sauce must thicken gently and must not boil after the yolks are added.
