Why it works: Sugar and egg are a kitchen classic. They rank in the top 21% of all ingredient pairs, and cooks put them together in 122,807 recipes. Both carry 2-nonenal, which smells fatty, green. The science ↓

Strain the mixture through a linen cloth and measure the juice.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs
What each ingredient does
- Eggs
- Yolks thicken the custard and whites, whipped and folded in, lighten the texture.
- Corn starch
- Thickens the strawberry juice as it boils, giving the cream body.
- Strawberries
- Supply the main flavor and juice that forms the base of the cream.
- White granulated sugar
- Sweetens the juice and helps stabilize the whipped egg whites.
The step that matters
Cooking the yolks without boiling. Egg yolks thicken at temperatures just above boiling water, but if they boil they can curdle and turn grainy. Heat gently and stir constantly until the mixture coats a spoon.
