Almond Sponge Cake

Ingredients

Directions

The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point.

Prepare

  1. Preheat the oven to 350°F (175°C).

  2. In a mortar, grind the almonds with 2 teaspoons of sweet milk for each ounce.

  3. Prepare the peach kernels in the same way as the almonds.

  4. Beat the egg whites until stiff and set aside.

Make the batter

  1. In another bowl, beat the yolks with the sugar until light.

  2. Stir in the ground almonds and peach kernels.

  3. Add half of the flour and baking powder, then fold in the egg whites.

  4. Finally, add the remaining flour and mix gently.

  5. Pour the batter into a buttered cake pan.

Bake

  1. Bake for 1 hour, checking with a wooden skewer after 50 minutes. If it comes out clean, the cake is done.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Sweet almonds
Provide the main nutty flavour and a moist, tender crumb in the cake.
Eggs
Whites are beaten to add air and lift, while yolks add richness and structure.
White granulated sugar
Sweetens the cake and, beaten with the yolks, helps create a light texture.
Flour
Forms the cake's structure as it sets during baking.
Baking powder
Releases gas in the batter so the cake rises and becomes light.

The step that matters

Folding in the egg whites. Beaten whites hold the air that lightens the batter. Stirring them vigorously or overmixing after adding the flour deflates the foam, leaving a dense cake.
