Chocolate Macaroons

Oven, in the book's wordsA slow oven

Ingredients

Directions

The book says “a slow oven”. The 300°F (150°C) in the steps is the modern equivalent, not the book's own figure.

Prepare

  1. Preheat the oven to 300°F (150°C).

  2. Line a baking pan with white paper and butter it.

Make the batter

  1. In a bowl, mix the chocolate and ground almonds together.

  2. Stir in the sugar, then beat the egg white until stiff peaks form and fold it into the mixture.

  3. Add the vanilla, cinnamon, and corn starch, and mix well.

Bake

  1. Drop half a teaspoon of the mixture onto the paper, spaced one inch apart.

  2. Bake for 45 minutes or until the macaroons are hard and dry.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Sweet almonds
Provide the bulk and nutty flavour of the macaroons.
Egg white
Whipped to stiff peaks, it gives the mixture lift and structure.
Sugar
Sweetens the mixture and helps it set as it bakes.
Chocolate
Adds chocolate flavour and colour to the macaroons.
Corn starch
Helps the macaroons hold their shape and stay tender.

The step that matters

Folding in the egg white. Stiff peaks trap air that gives lift; overmixing after folding in deflates the foam, leaving dense, flat macaroons.
