What each ingredient does
- Flat pod green peas
- Form the main body of the canned vegetable, cooked until tender during processing.
- Coarse sea salt
- Seasons the peas and flavors the packing water.
The step that matters
Puncture a small hole in each can to release steam. Sealed cans trap steam during heating, and pressure can build inside them. Venting the steam before resealing lets the pressure release so the cans do not burst or seal improperly during the second boil.
