Ingredients

Directions

  1. Drain, rinse, and remove all bits of shell from the oysters.

  2. Roll the crackers until fine as cornmeal and season with salt, pepper, and a little mace.

  3. Coat each oyster in the seasoned cracker mixture.

  4. Heat butter and lard in a frying pan.

  5. Add a layer of oysters to the pan and brown one side, then turn and brown the other side.

  6. Serve immediately with a garnish of parsley.

  7. Alternatively, dip the oysters in beaten egg yolk, then in cornmeal, and fry in hot lard.
