Fricasseed Chicken

Ingredients

Directions

  1. Cut the chickens and sprinkle the pieces with salt, pepper, and spices.

  2. Put the water in a kettle and lay the chicken skin side down.

  3. Slice the onion over the chicken, cover closely, and simmer until done.

  4. Remove the chicken and keep it hot on a platter.

  5. Rub the butter and flour together, adding a little gravy to soften it.

  6. Stir the butter and flour mixture into the gravy and boil for 2-3 minutes.

  7. Pour in the cream and, once it boils, pour it over the beaten yolks.

  8. Return the mixture to the saucepan and heat thoroughly without boiling.

  9. Pour the sauce over the chicken.
