Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Potatoes
Provide the starchy body of the dish, which softens fully when boiled.
Flour
Thickens the milk and butter mixture into a smooth, coating sauce.
Butter
Adds richness and fat, giving the sauce a silky mouthfeel.
Milk
Forms the liquid base of the sauce, which flour thickens.

The step that matters

Shaking the potatoes after draining. Shaking near an open window lets surface moisture evaporate, so the potatoes stay dry and fluffy rather than waterlogged and soggy.

Swap the potato

How well each one fits the dish's main ingredients (milk, flour, butter):

  1. Potatothe original
  2. Arrowrootfits about as well
  3. Leekfits less well
  4. Shallotfits less well

Fit is the average pairing score against milk, flour, butter. Candidates are from the same food group and used in at least 100 recipes.
