Ingredients

Directions

The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point.

Make the batter

  1. In a large bowl, mix the softened butter, sugar, currants, grated nutmeg, lemon zest, lemon juice, and dissolved baking soda.

  2. Add the beaten egg and mix thoroughly with your hands.

  3. Pour the batter into two small, well-buttered pans.

Rise and bake

  1. Place the pans in a warm area for several hours to allow the batter to rise.

  2. Once the batter is light, bake in a preheated oven at 350°F (175°C) until golden.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Butter
Adds richness and a tender crumb, and helps the cake brown.
Sugar
Sweetens the batter and helps it brown in the oven.
Egg
Binds the batter and gives it structure as it bakes.
Baking soda
Produces gas for lift and reacts with the lemon juice's acidity.

The step that matters

Let the batter get light before baking. Rising traps gas in the batter, which gives a lighter crumb. Baking before the batter looks light can leave the cake dense.

Swap the currant

How well each one fits the dish's main ingredients (sugar, butter, nutmeg, lemon, egg):

  1. Vanillafits better
  2. Orangefits better
  3. Figfits better
  4. Currantthe original

Fit is the average pairing score against sugar, butter, nutmeg, lemon, egg. Candidates are from the same food group and used in at least 100 recipes.
