Ingredients

Directions

The book says “a hot oven”. The 400°F (200°C) in the steps is the modern equivalent, not the book's own figure.

Make the filling

  1. Stir part of the sugar into the creamed butter.

  2. Add the egg yolks, the remaining sugar, and the lemon juice and rind; mix well.

  3. Beat the egg whites to a stiff froth and fold them into the mixture.

Bake and serve

  1. Pour the mixture into pie plates lined with pastry.

  2. Bake at 400°F (200°C) for 30 minutes.

  3. Let cool before serving.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Eggs
Yolks enrich and thicken the filling, while whipped whites add lightness and structure.
Butter
Creamed butter adds richness and a tender, fine texture to the filling.
Sugar
Sweetens the filling and helps the butter cream into a smooth base.
Lemons
Juice and rind add acidity and bright citrus aroma to balance the sweetness.

The step that matters

Folding in the beaten egg whites. Whites beaten to a stiff froth trap air that gives lift. Folding gently, rather than stirring, keeps that air from collapsing, so the filling stays light when it bakes.
