Directions

Prepare the water

  1. Fill an egg poacher or spider with boiling water.

  2. Move the poacher to a cooler part of the stove where the water won't boil.

Cook the eggs

  1. Carefully break the eggs into the sections, cover, and let stand for three minutes or until the whites are set.

  2. Alternatively, dip hot water over the eggs until they look pink.

Serve

  1. Use a spatula to carefully loosen the eggs and remove them to a piece of nicely browned and buttered toast.

  2. Season with coarse sea salt and a dash of paprika, and garnish with parsley.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Eggs
Proteins set into a firm white around the yolk as they heat, giving the egg its shape.
Butter
Adds richness and flavor, and helps the toast brown and taste savory.

The step that matters

Keep the water below a boil. Water at a rolling boil churns the eggs and tears the whites apart, while gentler heat lets the proteins set slowly and hold together around the yolk.

Swap the parsley

How well each one fits the dish's main ingredients (egg, butter):

  1. Nutmegfits about as well
  2. Parsleythe original
  3. Capersfits about as well
  4. Tarragonfits less well

Fit is the average pairing score against egg, butter. Candidates are from the same food group and used in at least 100 recipes.
