What each ingredient does

Eggs
Whites set around the filling, and the yolks form the creamy base of the filling.
Melted butter
Adds richness and a smooth, moist texture to the yolk filling.
Anchovies or sardines
Add a salty, savoury depth to the yolk filling.
Vinegar
Adds acidity that brightens the rich yolk filling.
French mustard
Adds sharpness and helps balance the richness of the yolks.

The step that matters

Cook the eggs at a gentle heat. Holding eggs at a rolling boil for 30 minutes makes the whites rubbery and can leave the yolks dry and chalky with a grey ring. Keep the heat gentle and cool the eggs promptly so the yolks stay creamy and easy to scoop.

Swap the mustard

How well each one fits the dish's main ingredients (egg, butter, vinegar):

  1. Cucumberfits about as well
