Ingredients

Directions

The book says “a quick oven”. The 400°F (200°C) in the steps is the modern equivalent, not the book's own figure.

Make the sauce

  1. Rub the butter and flour together in a fry‑pan until smooth.

  2. Add the stock and cream to the pan.

  3. Stir until it boils, then remove from heat.

  4. Stir in the beaten egg yolks, cheese, and seasonings.

Assemble and bake

  1. Layer sauce in a baking dish.

  2. Layer chopped peppers on top of the sauce.

  3. Layer sliced potatoes over the peppers.

  4. Repeat the layers, finishing with sauce on top.

  5. Sprinkle bread crumbs and small pieces of butter over the top.

  6. Bake in a 400°F (200°C) oven until brown.

  7. Serve in the baking dish.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Potatoes
Form the bulk of the layers and become tender as they bake.
Egg yolks
Thicken the sauce and enrich it as they set with gentle heat.
Butter and flour
Form a roux that thickens the sauce.
Cheese
Melts into the sauce and browns on top for flavor and color.
Cream
Adds richness and body to the sauce.

The step that matters

Stir in the egg yolks gently. Egg yolks thicken when heated but can scramble if the sauce is too hot. Remove the pan from heat before adding them, so the sauce turns smooth and creamy rather than grainy.

Swap the potato

How well each one fits the dish's main ingredients (cream, flour, egg, milk, butter, cheese, pepper):

  1. Potatothe original
  2. Asparagusfits about as well
  3. Capsicumfits about as well
  4. Spinachfits less well

Fit is the average pairing score against cream, flour, egg, milk, butter, cheese, pepper. Candidates are from the same food group and used in at least 100 recipes.
