What each ingredient does

Rhubarb
Provides the tart flavour and bulk of the jam.
Dried figs
Add body and natural sweetness to the fruit mixture.
Sugar
Sweetens the jam and helps it thicken as it cooks down.
Lemon juice
Adds acidity that brightens the flavour and supports setting.

The step that matters

Boiling until thick. Rhubarb releases a lot of water, and the jam only sets once enough moisture evaporates and the sugar concentrates. Stopping too early leaves it runny, while overcooking can make it stiff and scorch on the bottom.

Swap the fig

How well each one fits the dish's main ingredients (rhubarb, orange, lemon, sugar):

  1. Limefits better
  2. Vanillafits better
  3. Blueberryfits about as well
  4. Figthe original

Fit is the average pairing score against rhubarb, orange, lemon, sugar. Candidates are from the same food group and used in at least 100 recipes.
