What each ingredient does

Potatoes
Form the bulk of the dish and turn soft and tender when baked.
Melted butter
Adds richness and moisture and helps the potatoes brown as they bake.
Lemon juice
Adds a bright acidity that balances the richness of the butter.

The step that matters

Basting with the butter mixture. Basting twice during baking keeps the surface moist so the potatoes do not dry out or scorch before they become soft throughout.
