Why it works: Celery and pepper match in chemistry and in kitchens. They rank in the top 5% of all ingredient pairs, and cooks put them together in 16,012 recipes. Both carry 4'-methylacetophenone, which smells bitter almond. The science ↓

Ingredients

Directions

The book gives no cooking times; the times in the steps were added in transcription, so check for doneness rather than trusting the clock.

Prepare

  1. Clean the clams thoroughly and soak them in water for 30 minutes.

Make the broth

  1. In a pot, melt butter and sauté chopped onion and celery until soft.

  2. Add the clams and water, then bring to a boil.

  3. Simmer for 10 minutes until clams open.

  4. Remove clams, strain the broth, and return it to the pot.

Finish and serve

  1. Add cream, salt, and pepper to taste, then heat through. Serve hot.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Clams
Provide the main flavor and texture, and release their briny juices into the broth as they open.
Butter
Adds fat that carries aroma and gives the soup a rich mouthfeel.
Onion
Softened in butter, it builds a sweet, savory aromatic base.
Celery
Softened in butter, it adds a mild, fresh aromatic background to the broth.
Cream
Adds fat that makes the broth smooth and rounds out its flavor.

The step that matters

Simmering the clams. Clam meat turns tough and rubbery when overcooked. Simmer only until the shells open, then remove the clams promptly.

Swap the celery

How well each one fits the dish's main ingredients (clam, butter, onion, pepper, cream):

  1. Garlicfits better
  2. Parsleyfits about as well
  3. Celerythe original
  4. Thymefits about as well

Fit is the average pairing score against clam, butter, onion, pepper, cream. Candidates are from the same food group and used in at least 100 recipes.
