Ingredients

Directions

The book says “a hot oven”. The 400°F (200°C) in the steps is the modern equivalent, not the book's own figure.

Prepare

  1. Wash and pick over the oysters.

  2. Butter a baking dish and place a layer of oysters in it.

Assemble

  1. Sprinkle the oysters with coarse sea salt, black pepper, and bits of butter.

  2. Add a layer of cracker crumbs on top.

  3. If desired, add 3 tablespoons of sherry before the top layer of crumbs.

  4. Cover the top with buttered crumbs.

Bake

  1. Bake for 20 minutes at 400°F (200°C) or until the edges are curled.

What each ingredient does

Oysters
Provide the main ingredient, whose briny flavor and tender texture define the dish.
Butter
Adds richness and helps the crumbs brown in the oven.
Cracker crumbs
Form the layers that soak up liquid and give a crisp, golden topping.

The step that matters

Baking until the edges curl. Oysters cook quickly, and overbaking toughens them and dries the dish, so the edges curling is the cue to stop.
