Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Chicken
Provides the main protein and meaty body of the dish, becoming tender as it cooks slowly.
Salt pork
Renders fat for browning the chicken and adds savory, smoky flavor to the dish.
Flour
Thickens the cooking liquid into a smooth, lightly bound sauce.
Onion
Softens in the fat, adding sweetness and aroma to the base of the dish.

The step that matters

Browning the chicken in the hot fat. The pieces must be dry and the fat hot so the surface browns rather than steams. Browning builds flavor through the Maillard reaction, and crowding the pan lowers the temperature and prevents color.

Swap the peas

How well each one fits the dish's main ingredients (chicken, celery, pork, onion, flour, bread):

  1. Beansfits better
  2. Sesamefits better
  3. Lentilsfits better
  4. Peasthe original

Fit is the average pairing score against chicken, celery, pork, onion, flour, bread. Candidates are from the same food group and used in at least 100 recipes.
