Why it works: Carrot and celery match in chemistry and in kitchens. They rank in the top 1% of all ingredient pairs, and cooks put them together in 10,173 recipes. Both carry myristicin, which smells spice, warm. The science ↓
Chicken Julienne
Ingredients
Directions
The book says “a hot oven”. The 400°F (200°C) in the steps is the modern equivalent, not the book's own figure.
Prepare
Preheat the oven to 400°F (200°C).
Split the chickens down the back and lay them breast-down in a baking pan.
Fill the cavity with equal quantities of onion, carrot, celery, and peas. Season with salt and pepper, and add butter pieces.
Cook
Pour in the hot water and cook for 30 minutes or until the vegetables are tender. Remove the vegetables and turn the chickens over to brown.
Make the sauce and serve
Make a sauce by adding flour to the liquid in the pan along with the vegetables and cream.
Pour the sauce around the chicken and garnish with sweet potato croquettes.
Transcribed from a scanned cookbook and modernised for today's kitchens. Where the book gave no heat or time, or said "a moderate oven", the temperatures and times here may be modern equivalents rather than the book's own figures.

What each ingredient does
- Whole chickens
- Forms the main body of the dish, cooking to firm, moist meat.
- Butter
- Adds fat for rich flavor and helps the chicken brown in the oven.
- Flour
- Thickens the pan liquid into a sauce as its starch swells with heat.
- Cream
- Adds richness and a smoother, more velvety body to the sauce.
- Onion
- Softens and adds savory sweetness and aroma as it cooks.
- Carrot
- Softens and adds natural sweetness and moisture to the dish.
The step that matters
Adding the flour to the pan liquid. Flour can clump if it is not fully mixed into the hot liquid first. Stirring it in evenly and keeping the sauce hot lets the starch swell and thicken it smoothly.
Swap the peas
How well each one fits the dish's main ingredients (chicken, onion, carrot, celery, pepper, butter, flour):
- Beansfits better
- Lentilsfits better
- Cashew nutfits better

Fit is the average pairing score against chicken, onion, carrot, celery, pepper, butter, flour. Candidates are from the same food group and used in at least 100 recipes.
