What each ingredient does

Salsify
Provides the main vegetable body and mild, slightly sweet flavor of the dish.
Butter
Adds richness and flavor when tossed over the cooked salsify or used for browning.
Vinegar or lemon juice
Its acid in the cold water helps prevent the cut vegetable from discoloring.

The step that matters

Scraping and soaking the salsify promptly. Salsify discolors quickly once its surface is exposed to air. Placing it straight into acidulated cold water slows the browning caused by oxidation, so the vegetable stays pale.
